Pizza




Today at the store we bought a new pizza crust called Bobli. Its pre-cooked. You just add the sauce your topping and cheese to it. Cook it for about 10 min. It was really good. Next time I think we will try the thin crust. We also made some breadsticks to go with it. It was very good

Chicken Chillies



This has to be my new favorite thing to make. It was so good. I LOVED it. I got it from this blog. I am sorry I dont remember the nestie name.


1/2 cup cour cream
1/2 cup cream cheese
2 tbsp dry onion flakes
2 tsp garlic powder
1 tbsp cumin
1 can rotel
1 tsp salt
1/2 tsp pepper
2 lbs frozen southern style hash browns
1 1/2 cup cubed chicken
1 1/2 cup tortilla chips (I crushed mine)


In a large bowl, combine sour cream, cream cheese, onion flakes, garlic powder, cumin, rotel, salt and pepper. Stir in has browns, chicken and 1/2 the cheese. Place in a dish and top with tortilla chips and remaining cheese. Bake uncovered at 375 for 45 min.


This was not apart of the original recipe but I diced up some tomatoes and put them on top of the chips. They turned out really good. Also love our high quality plates in the first pic?

Crock Pot Lasagna



I made this 1 time before, and it was terrible. This time I made sure I went from step 1-2-3 and so on (MOM?) This time it turned out much better. I would rather with out the meant. However Rich would not eat it with out it.


1 lb. ground beef
2 garlic cloves, crushed and minced
1 large jar spaghetti sauce (such as Ragu in the1 lb. 10 ounce jar)
1 package 8 ounces lasagna noodles
16 ounces shredded mozzarella cheese
1 lb. ricotta cheese
1/4 cup milk
1 egg
1/2 cup shredded Parmesan/Romano cheese
Salt and pepper to taste



  • Brown the beef, and garlic in a little oil in a frying pan. Drain off any grease.

  • Add the spaghetti sauce into the browned meat mixture. Mix well.

  • In a separate bowl, mix the ricotta cheese, milk, and egg.

  • Beat until thoroughly mixed and smooth.

  • Then mix in the mozzarella cheese and the grated cheese, so that all the cheeses are combined.

  • Grease the slow cooker/Crock Pot with some vegetable shortening on the bottom and sides.

  • Put about 1/4 of the meat and sauce mixture in the bottom of the crock pot.

  • Put a layer of noodles on top of that (break or cut them if needed).

  • Put about 1/3 of the cheese mixture on top of that.

  • Then repeat with sauce, noodles, cheese for another 2 layers.

  • Top with meat sauce.

  • Cook on low for 3 hours or until noodles are tender

Again sorry about the quality of the pic. I am not sure whats going on with that.

Layed Enchilada Bake


This also came from Kraft. This was so good. I kept the left overs and had some for lunch 2 days. I will for sure be making this again.


1 lbs ground beef

2c cups salsa

1/2 Italian dressing

2 tbsp taco seasoning

6 flour tortillas

1 cup sour cream

8 oz mexican cheese



  • Preheat oven to 400. Brown meat-drain, add salsa, dressing, and seasoning mix. Mix well

  • Arrange 3 of the tortillas in a single layer on the bottom of a 13-9 baking dish. Cover with layers of half the meat mix, sour cream and cheese. Repeat layers until meat mix is gone. Cover with foil

  • Bake covered for 30 min. Remove foil and bake for 10 min

Cheesecake



Okay so this was the first time I have EVER made cheesecake. OMG it was so good. I did learn something,...I never knew you actually had to bake cheesecake. Learn something new everyday ☺. I ended up with WAY to much batter so I just made a small cheese cake with no crust. This was so yummy I can not wait to make it again!


20 Oreo cookies crushed ( I used reduced fat)
3 tbsp butter-melted
4 8ox pkgs of philly cream cheese (I used fat free)
1 cup sugar
1 tsp vanilla
1 cup sour cream
4 eggs
6 squares semi sweet melted chocolate

  • Preheat oven to 325. Line13x9 baking pan with foil
  • Mix the cookie crumbs with the butter and put it in the bottom of the pan. Press them down firmly. (I used a measuring cup to get them to pack down) Bake for 10 min.
  • Beat cream cheese sugar and vanilla in a bowl. Add sour cream and mix well. Add eggs 1 at a time beating on low until everything is blended together
  • Remove 1 cup of the batter and set it aside.
  • Stir the melted chocolate in the remaining batter
  • Top the mix with the the 1 cup you set aside and run a knife through it to make swirls
  • Bake 40 min
  • Make sure its completely cooled before you put it in the fridge
  • Keep it refrigerate for 4 hrs

Slow Cooker Tex-Mex Chicken


I got this from Kraft. Not sure its something I will make again. The pepper we way over done, and the chicken was dry. It was good...just not of my favs. I made some rice up and served it over the rice. Also I did not use a red pepper, I just did 2 green.
1 lbs boneless skinless chicken breast cut into 1 in wide strips
2 tbsp taco seasoning mix
2 tbsp flour
1 green pepper
1 red pepper
1c frozen corn
1 1/2 cup thick 'n chunky salsa
1 cup mexican style cheese

Toss chicken with seasoning and flour in the slow cooker. Stir all remaining ingredients except the cheese; cover with the lid
Cook on low for 6-8 hrs (or high for 3-4 hrs)
Top with cheese after its all cooked.

Stuffed Shells



Well this was not the best thing I have ever made. I just do not have the patience to do all this.

15 jumbo shells
2 chicken breast- cooked and shredded
7 1/2 ricotta cheese
2 tsp garlic powder
couple shakes of red peppers flakes
1 tsp Italian seasoning
1/2 cup mozz cheese
salt and pepper to taste
2 cups marinara sauce

Heat oven to 400, spray baking dish with cooking spray
Mix together all ingredients from shredded chicken to salt and pepper
Spread 1/2 cup sauce on bottom of baking dish
Fill cooked shells with chicken mix and place filled side up in baking dish. Pour rest of sauce over shells. Sprinkle extra cheese on top.
Cover with foil and bake 15-20 minutes

Beef Stew




This was so simple and so good on a cold day.

1 lb of stew meat
1/2 bag baby carrots
3 medium potatoes-cut up
1 pks of beef stew seasoning

Add everything to crock pot and add as much water as the seasoning packet says. Cook on low for about 7-8 hrs.

What a great idea!



Have you tried Ziploc's zip n' steam bags? If no...omg you are missing out! I bought some after my mom told me how good and easy they were. I love them. I made potatoes one night. Its so easy it comes with a little book of different ideas for things you can make. You can go to the website and they have even more things to make. These are a must have in our house now!

AdamsWife's Chili


This chili is so good. It tastes just like my moms. I was a little worried about making. I was unsure how it was going to turn out. I got this recipe from Adamswife Its really something you can just throw together before work and come home to a nice warm bowl of soup!

1 lb hamburger
1 large can tomato sauce
1 large can chopped tomato's
1 can chili beans
1 pkgs chili seasoning

Cook the hamburger till its no longer pink
Add all the ingredients to the crock pot
Cook on low for 8 hrs.

Baked Ziti



This is probally one of my fav things to make. DH is not to hip on it. He is not a big pasta fan. But I LOVE it!

1 lb ziti noodles
2-26 oz jars spaghetti sauce (I use light)
6oz provolone cheese
1 1/2 cup sour cream
6 oz mozzarella cheese


Pre-Heat oven to 350
Cook the noodle till they are done
Drain
Add in both jars of sauce
Mix well

In a 9x13 baking dish, add about 1/2 the noodles
Layer with provolone cheese
Sour cream over the provolone cheese
The rest of the noodle mix
Top with mozz cheese
Cook for about 30

Quesadilla



We have a quesadilla maker so its a little easier to make them.


1 lb of stew meat
cheese
sour cream
tortillas

Cook the meat before hand.
On 1 tortilla spread sour cream over it like butter on toast
Lay it in the maker
Put some meat in the middle
Cover it with cheese
Place the other tortilla over it
Cook it for about 5 min. They are so good and fast.

Nachos


This is a classic at our house. The only pic I have is one of DH's taco he made out of the left over meat and cheese.


1 lb hamburger meat
1 pkgs taco seasoning
Campbell's cheese soup
Chips


Cook the hamburger according to the taco package. Heat the cheese and pour over the chips.

Chicken and Rice Bake



This was SO good and so easy to make. DH said this was one of his new fav dinners. I got this out of Oct's Cooking Light.


1 10oz can cream chicken soup

1 1/3 cups water

3 /4 uncooked rice

1/2 tsp onion powder

1/4 tsp black pepper

2c cups frozen veggies

4 skinless chicken breast

1/2 cup cheddar cheese


Stir soup, water, rice, onion powder, pepper, and veggies in a 11c8 baking dish

Top with chicken and cover

Bake at 375 for 45 min or until chicken is done

Top with cheese and let stand for about 5-10 min

Pizza Bread






I got this from a fellow nestie (but I dont remember who sorry). I was okay






1 roll refrigerated french bread dough
Pepperoni
Mozz Cheese
Egg Wash (1 egg white and water)
Pizza Sauce
Heat oven on 375
Roll out dough and
Spread pizza sauce over the dough
Sprinkle with mozz cheese
Carefully roll the dough in a cylinder shape
Pinch ends and top to seal
Brush top with egg wash
I put Italian seasoning and garlic salt on top
Make a few slices in the top of the loaf to allow air to vent
Bake at 375 for about 20 min

Basil Chicken


4 boneless skinless chicken breast

16 fresh whole basil leaves

1/2 cup chicken broth

1/4 cups basil leaves

1 teaspoon lemon juice

1/4 teaspoon pepper

1 teaspoon mince garlic

1-3 tablespoons olive oil


With knife parallel to cutting board, cut slit along one side of each chicken breast to for a pocket. Place 4 whole basil leaves in each pocket, press each breast closed. In a small bowl combine broth, chopped bail, lemon juice, pepper and garlic, and set aside. In medium nonstick skillet heat oil over medium heat. Add chicken and brown on both sides. Pour broth mixture over the chicken and bring to a boil. Reduce heat to low: cover and cook 7-8 min or until the chicken is no longer pink on the inside.


I cheated a little. Rich had to make this because messing with raw meat grosses me out and I can not do it. It sounds like a lot of work, but its really not that bad. Very moist and good!

Cavatelli


1 lbs of cavatelli noodles

1-20oz jar of spaghetti sauce (I used light)

1 pkg of pepperpmi (I used like 1/4 of the package)

3 cups of mozz cheese


Cook the noodles according to the package.

Mix ingredients in a 10x13 baking dish.

Cover with about 2 1/2 cups of cheese

Bake on 350 for about 20-30 min.


I take it out and add a little more cheese to the top and let it melt. Its fast, easy and very good.

My 8 ''interesting'' facts

1. I am the biggest snow bunny ever! I LOVE the snow, its so pretty


2. I hate chunks of meat, yuck. I can not eat like meatloaf, meatballs, little chucks in my pasta (or anything else) I do however love cheeseburgers and steak. I don't know what it is, but I can not do it.

3. I could eat cucumbers and pickles everyday of the week several times a day if my body and diet would let me.

4. I speed all the time. I don't mean to, I just get to thinking about things and paying attention to the other drivers, and I forget about it. But I HATE when Rich speeds drives me crazy.

5. I love to play playstaion or Nintendo with Rich, he has some great games


6. I wish I was so much better in the kitchen than I am

7. I have a slight OCD when it comes to organization. Things have to be lined up, put away right, labels facing out or up. I can not help it.

8. I HATE tomato soup. I will have it to dip my grilled cheese in, but after that I throw it out. Its so nasty.

Enchiladas



This is one of my fav meals to make, but very hard to take a pic of.

1 lb of hamburger
1-19oz can of enchilada sause
1-10 oz can of enchilada sauce
10oz of sour cream
2 cups of mozz cheese
5 tortillas

Brown the hamburger
Drain
Add back to the pan with the 19 oz of sauce
1 cup of cheese
Mix together
Add 1 spoon full of meat mix to an tortilla
Put it into a baking dish until all tortillas are gone

While you are preparing the tortilla's
in a separate pan mix the 10oz sauce and the all the sour cream
Stir until the sour cream is melted

Pour the sour cream and sauce of the tortillas and top the 1 cup of cheese
Bake at 325 for about 30 min.

Salsa Chicken



''One of the best experiments you have made'' That is what DH said tonight when he was eating it. What a great compliment (considering I am not very good in the kitchen)


1 lb of chicken barest

1 pkgs of taco seasoning

1 jar of salsa (16oz)

1/2 can of corn
1 can cream of chicken soup


I mixed the taco seasoning, salsa and corn together poured it over the frozen chicken and let it cook in the crock pot for about 10 hours. I served it over a tortilla with some lite sour cream. It was so yummy and easy. I will for sure make this again.

Chicken Wrap



This right now is my most favorite lunch. Thanks to a friend I found about about the flat out wraps. Even my husband liked it.

1/2 chicken breast cut up
1 flat out wrap (I used the light)
1 tbsp lite ranch
1 small tomato cut up
Alfalfa sprouts

I just spread the ranch on the wrap, and add the other things to it. Its so fast, yummy and good for you. This is just how I like it. There are so many way you can use the flat out.

My first.

After reading every one's blogs from the WC board. I ''need'' a blog for the enjoyment of others. Not just my mom and my husband will be able to laugh at me now.. My cooking skills, are well not that advanced should I say? I am trying to learn new things in the kitchen. Its hard, I come from a LONG line of GREAT cooks. My Mom is probably the best cook I know, and my Great Grandma is very good also. I try to learn but I get discouraged very very easy. My meals wont be as good as everyone else, but I think it will be fun to try this out, and try other things. Wish me luck. Tonight's meal will be pretty boring (steak, potatoes, and salad) so I am not sure I will post it. I may however do Thursday nights dinner.
